About Snapper Creek
We started selling our jerky in 2024 soon after getting married and moving to Nashville. Phil loves being creative in the kitchen and started testing out different jerky flavors in his mini air fryer back in 2022. Marion was a loyal taste tester of every variation. Pretty soon, they knew he had created something great.
Always a romantic, Phil chose the name Snapper Creek in homage of the canal close to where Marion grew up. Together, they’ve turned a household recipe into a business grounded in flavor, nutrition, and a little bit of mischief.

Giving back is at the heart of what we do. For every 25 bags of Snapper Creek Jerky sold, we donate one bag to Second Harvest Food Bank of Middle Tennessee.
But this isn’t just about giving food away—it’s about addressing one of the biggest barriers kids face to learning and opportunity. Studies show that hunger undermines concentration, memory, and classroom performance, and those setbacks compound into broader educational and economic inequality. With recent cuts to education budgets, ensuring kids have access to healthy, protein-rich food is more important than ever. That’s why we work directly with the team at Second Harvest to make sure our nutrient-dense snacks reach children most in need—because every child deserves the fuel to learn, grow, and thrive.
How do you make Snapper Creek Jerky?
We make our jerky from seitan (it is crucial to emphasize the "AY" in SAY-tan). Seitan is a wheat-based protein (first documented in the 6th century by monks in China!). The starch and bran in wheat is filtered out until you are left with vital-wheat gluten, which is very high in protein. We buy the vital wheat gluten in flour-like form and mix it with lentils. Together, these two ingredients form a complete protein because lentils add Lysene, which wheat gluten is low on. We then add some extra flavor to the base: soy sauce, apple cider vinegar, onions, among other things (see back of bags for full ingredients), and then mix it all like a dough, bake it like a bread, slice it thinly, marinate it with our signature flavors, and dehydrate it to jerky perfection. It is a long process, but the end result is worth it.
